Recipes to Dream About

I miss my kitchen.  That's one of the hardest things about being on the road, is not having my own kitchen.  I thought I would share two killer recipes with you in-spite of my lack of being able to make them myself right now.  They don't go together at all...so don't try that! 

For an appetizer you can't go wrong with this guac.  I love the little spicy kick it has to it.
4 avocados, mashed
1/2 of a medium purple onion, diced
2 Serrano peppers, diced into tiny pieces
3 roma tomatoes, diced
1 lime, juiced
handful of cilantro chopped
minced garlic (i love it, so I normally add like a TBS of the jar stuff)
pinch of cayenne
and sea salt to taste

Easy peasy!

And this coffee cake is to die for!  My brother made this one, and it's already been too long since I've had it.

1/3 cup soft tofu
1 cup almond milk
1 TBS. apple cider vinegar
1 cup spelt flour
1 cup whole wheat flour
1/2 cup almond flour
1 1/4 cup sucanat
1 TBS. cinnamon
1/2 tsp. salt
3/4 cup coconut oil
3/4 cup walnuts
1 tsp. baking powder
1 tsp. baking soda

Preheat oven to 350
Blend tofu, milk, vinegar -- set aside
Stir together flour, sugar, cinnamon, salt, and oil.
Take 1 cup of mixture (flour, sugar, etc.) and place in medium bowl and stir in walnuts.
Add the baking soda and powder to non-walnut mixture, then add tofu mixture
Oil 9X13 pan, spread mix, then top with walnut mixture.
Bake 30-40 min.

This recipe would be perfect for a brunch, tea, or just when you want an extra little treat.
