Home Sweet Home. We're off the road for a bit, which means my favorite thing...Kitchen Time! Jordan and I sat down together and planned out a whole menu for a week! I got to go shopping, and now the fun begins.
So today I decided to make a yummy hearty breakfast to brighten our dreary day. I give you:
These were absolutely divine! And better than any diner breakfast. I love knowing exactly what goes into my food. And there's nothin but goodness in these bad boys.
(recipe adapted from Oh She Glows)
Strawberry Coconut Banana Pancakes
1 cup + 1/4 spelt flour
1/2 cup unsweetened shredded coconut
1 tsp. baking powder
1/4 tsp. baking soda
1/4 heaping tsp. nutmeg
1/4 heaping tsp. allspice
1/4 heaping tsp. cinnamon
pinch of sea salt
3/4 cup light coconut milk
1/2 tsp. vanilla extract
1 TBS. amber agave
3/4 cup warm water
fresh strawberries for garnish
chopped pecans for garnish
and coconut banana cream for garnish
1 TBS. coconut butter
1/2 banana mashed
1/2 TBS. pure maple syrup
Mix all of the dry ingredient together. Then in a separate bowl whisk together wet ingredient. Add the wet to the dry and stir until no clumps remain. Allow to rest a few minutes. Heat a nonstick skillet, and then pour 1/4 cup of batter into skillet. Cook until pancake begins to bubble and sides firm up. Then flip and cook the other side.
When pancakes are done, heat strawberries, and cream, and then layer pancakes with all of the toppings.
This will make any day brighter for sure!
On a side note. I doubled the batter, and we now have a boat load of pancakes to share. So who's comin over for breakfast!?
