Staying the Course

Still here, just horrible at blogging as of late.
The husband and I have been quite busy in our travels.  Doin our missionary thang.
But according to good fortune, it will all be paying off...
If you can't see it, the cookie reads: 
Traveling at this time would be a good investment of time and money. 

 And Just for clarification...I don't view our money raising as a mystic thing...just thought this was a fun note to receive at this time.  I do however believe that God is in control, and this will be a profitable time for us!  

I'm still maintaining my focus on a healthy lifestyle.  It's always a battle.  Making time for working out, and choosing to eat right.  I have not been perfect and these past few months have really been tough, but I feel I have a renewed passion for it all.  Though I never want to go back to the way things used to be, nor do I want to go back to the way I used to be...this is the hardest part to me.  The consistency of doing this day in and day out.  It seems to go back and forth between being easy and hard.  But I'm still fighting.  I just function best on a schedule...and that I do not have.  But nothing comes without work right!?  

And I have been lucky to find good things.
This panini was from Mama Jean's in Springfield.  It was called Buddha's Lunch.  And though I don't remember everything on it, it was bite after bite of deliciousness.  I do know it was marinated tofu, with kimchi.  Kimchi should be on way more stuff.  Call me crazy, but I love it!
And of course it all comes with lots of help from this guy!  Always helping me try to figure out places to eat that are good for us, and enjoyable.  I so appreciate his enthusiasm for a healthy life.  Recently, we enjoyed some sushi at a place in Shreveport, LA.  And of course I got the Veggie Lover Roll.
I'm still longing for the day when we're a bit more settled and I get to make what I want on a more consistent basis.  I just miss being in the kitchen, and discovering new recipes.  But for now...I'll have to wait a little longer as everything begins to make it's way into boxes and we stay on the road.
