I know I have something good when Jordan gets a second helping of it. If he has a third helping, I've knocked it out of the park. And if he eats all of it up before dinner, and is so full he can't really eat dinner...then I dunno know what I've created...but it was this:
Holidays are my favorite because it gives me an excuse to go all out. I'm usually in the kitchen for several days making all kinds of appetizers, the main meal, and desserts. But the 4th of July is supposed to be easy and kicked back. And though the 4th is long gone, this is one easy summer app you can throw together whether it's a special occasion or a regular night.
Easy Firecracker Bruschetta (adapted from this recipe)
Ingredients:
1 TBS. minced garlic
2 tomatoes chopped into cube-like pieces
handful of fresh basil, chopped
2 TBS. olive oil
2 TBS. lemon juice
1 TBS. balsamic vinegar
1 tsp. oregano
dash of cayenne
salt and pepper to taste
Baguette sliced
extra oil for toasting bread
Directions:
Turn oven on to broil. Using a pastry brush, coat each slice of bread on just one side with olive oil, don't go over board here...just a light coating, and bake until toasted.
Chop your tomatoes and basil, and then toss all of your ingredients together in a bowl. The mixture will be quite soupy, so I used a slotted spoon to scoop out just the right amount without all of the liquid onto each piece of toasted bread.
So easy! And So good!
