I miss Manila so much and I cannot wait until we get there. I'm so excited to set up a home there and plant ourselves in the city and begin the work God has for us. It cannot come quick enough! The other day I had the hankering for some Ube Ice-Cream, a tasty Filipino treat that I absolutely loved, so I thought I'd try my hand at making some.
I headed over to Manila Market (a local Filipino store) and picked up some Ube in a jar, as they did not carry Ube itself and looked up a recipe.
Not content to have just the ice-cream alone I thought of something else to do with it, that would be a perfect summer treat. I give you...
Ube Ice-Cream sandwiched between Vanilla Wafer Cookies sprinkled with Pistachios.
For the Ube Ice-Cream I adapted this recipe.
In a food processor mix together:
1/2 cup purple yam spread
1/4 cup unsweetened shredded coconut
1 1/2 cups Silk Coconut Milk
1 TBS. agave (b/c there was already sugar added to the paste)
1 tsp. vanilla extract
Then just follow the instructions for you ice-cream maker.
Vanilla Wafer Cookies (adapted from Peas and Thank You)
Ingredients:
1/2 cup vegan shortening (Earth Balance)
1/2 cup Stevia
1/4 cup brown sugar
2 TBS. Silk Coconut Milk
1 tsp. vanilla extract
1 1/3 whole wheat pastry flour
1/8 tsp. sea salt
1 tsp. baking powder
Directions:
Preheat oven to 350. In a bowl, sift together flour, salt, and baking powder and set aside. Meanwhile, cream together shortening, stevia, brown sugar, milk, and vanilla using a mixer. Next, slowly add the flour mixture to wet ingredients continually beating until dough forms. Then spoon out desired cookie sizes, and bake for 11 minutes. Allow cookies to set for a minute before transferring to cooling rack.

Now you're ready to assemble your ice-cream sandwiches. Place cookie top side down. Smear on a little ice-cream, place other cookie on top of ice-cream and press down. Then sprinkle pistachios around the edges if you wish.
I know the Ube ice-cream will be good by itself too, and I can definitely think of other ways to eat these cookies....like smearing some Justin's chocolate peanut butter on them. MMmmmm
I'm definitely happy with the outcome of these! What a fun summer treat.
Now if we could just get to Manila....
