Healthify the Holidays

One of the things that changed the most this Christmas, was the way I looked at cooking and baking.
Now don't get me wrong, I still love to cook and as you saw from Thanksgiving I still do my fair share at the Holidays...and Christmas was no different.  This year I sought to make things as healthy as possible, but with all of the flavors I know well and love.  And I would say it was all a success.  But lets first look back at last year.
These would be Red Velvet Cupcakes.  My Great Granny's recipe to be exact, which calls for two sticks of butter and a cup of oil-- just in the cake mix alone!
And the thing about all of these desserts is that we had so many leftovers of them.  And guess who ate most of them.  Me.
Which could very well be the reason I got up to 220 by the end of the Holidays.

I was definitely ready to make some changes.
And what changes I have made in the past year.  But there's always room for dessert!
I love how much most of these desserts were not that sweet, but totally satisfied any sweet tooth.
And rather than using oodles and oodles of sugar and butter, they called for much natural and unrefined ways of being sweetened and baked.
And I never felt bad about eating a single one.
And everyone loved them all the same.  And that's the part that makes me the happiest!
P.S.  Don't worry...I wouldn't post all of these yummy desserts without giving you the recipes.  Expect those from me soon.  Hope everyone had a Joyous and Merry Christmas!  We sure did!
