Peppermint Mocha Brownies
(adapted from edible perspectives)
Ingredients:
*1 1/2 cups spelt flour
*2/3 cup dutch cocoa
*4 TBS. instant coffee [optional]
*4 tsp. baking powder
*1 tsp. baking soda
*1 cup unsweetened applesauce
*1 cup sour supreme [vegan sour cream]
*1/2 cup sucanat
*1/2 cup agave
*4 tsp. vanilla
*1 cup dark chocolate chunks/chips
*1 cup chopped pecans
*1 tsp. salt
*crushed peppermints [reserved for topping]
Directions:
1. Preheat oven to 350*
2. Mix flour, cocoa, baking powder + soda, coffee, and salt together in a large bowl.
3. In a medium sized bowl combine applesauce, sour supreme, agave, sucanat, and vanilla until thoroughly combined.
4. Pour the wet ingredients into the dry ingredients and mix [by hand] until combined.
5. Let rest for a few minutes and then fold in chocolate chips and pecans.
6. Pour + spread evenly into a 9X13 greased pan.
7. Bake 20min to start and then add the crushed peppermint and cook an additional 5 minutes.
Let cool for at least 30min before cutting out of pan.
Strawberry Oat Bars
(adapted from Oh She Glows)
Ingredients:
For Oat Base:
*1 1/2 cups regular oats
*1 cup spelt flour
*1/2 tsp. baking soda
*1/2 tsp. sea salt
*1/2 cup sucanat
*1 chia egg (1 TBS. chia seeds + 4 TBS. warm water)
*1/2 cup + 2 TBS. earth balance, melted
*1/4 pure maple syrup
*2 TBS. almond milk
*1/4 cup finely chopped almonds (for topping only)
*2 TBS. sunflower seeds (for topping only)
For Strawberry Jam:
*2 1/4 cups chopped strawberries
*3-4 TBS. sucanat
*1 TBS. chia seeds
Directions:
*Line a square pan (9×9) with parchment paper and set aside.
*In a medium sized pot, add the chopped strawberries and sugar. Heat over low until the strawberries begin to sweat and it gets a bit watery. Once it heats down a bit, add in the chia seeds, and stir well. Bring to a boil and then simmer over low to medium heat for at least 10 minutes. Once it has thickened a bit, remove from heat and cool for 5-10 mins.
*In a small bowl, mix the chia or flax egg and set aside.
* In a large bowl, mix the oat base dry ingredients: oats, flour, sucanat, baking soda, salt. *In a small bowl, mix the melted earth balance, maple syrup, almond milk, and chia egg. Stir well.
*Add the wet mixture (reserving 1/2 cup of the mixture) to the dry and mix well, using hands if necessary.
*Pour the oat mixture onto the square pan and press down with fingers. Use a pastry roller to smooth out if desired.
*Pour on strawberry mixture and smooth out.
*Now mix in the almonds and sesame seeds to reserved mixture. And then sprinkle on the top of the strawberry layer.
* Bake at 350F for approximately 30 minutes. Allow to fully cool for at least 30-40 minutes before gently removing from pan.
*Slice and then store in a container in the fridge to keep firm.
