Do You Know the Muffin Man

Or Bread Loaf...lady?  Lets face it, I guess the secrets out...it doesn't have to be the holidays for me to be in a baking frenzy.  Today I was feeling creative, and kept thinking of different kinds of muffins and breads to make.  But I had to stop at three.  I think I need more people around to share the love with.

This was actually the third one I came up with but probably the one I was most excited about.  All these flavors sounded so good together!
Choco-Coconut Banana Muffins
Ingredients:
1 cup spelt flour
1 cup kamut flour
2 tsp. baking powder
1 tsp. baking soda
2 TBS. cocoa powder
1 TBS. apple cider vinegar
1/2 cup canola oil
1/2 cup sucanat
3 mashed bananas
1 cup coconut milk
1 cup unsweetened coconut shreds
1 cup dark chocolate chips

Directions:
Preheat oven to 375 and lightly grease muffin tin or loaf pan.
In mixing bowl, stir together dry ingredients.
In a separate bowl, mash bananas then add and whisk together wet ingredients.
Add wet ingredients to dry ingredients.
Once everything is mixed together, fold in coconut and chocolate chips.
Fill muffin tin about 3/4 of the way full and bake 25-30 minutes.  (Depending on the size.)

After a taste test, this one was voted the best!  Oh man!  I'm not lying when I say this is the best banana bread I've ever had.  Had to appease the husband and only have nuts on one side.  
Rustic Banana Bread
Ingredients:
2 ripe bananas
1/4 cup maple syrup
2 TBS. molasses
1/4 cup apple sauce
1/4 cup coconut oil
1 cup spelt flour
1 cup almond meal
1 tsp. baking powder
1 tsp. baking soda
1 heaping tsp. cinnamon
1/2 tsp. ground nutmeg
pinch of salt
(nuts for topping, optional)

Directions:
Preheat oven to 375 and lightly grease loaf pan with coconut oil.

In mixing bowl, stir together dry ingredients.  
In a separate bowl, mash bananas then add and whisk together wet ingredients.
Add wet ingredients to dry ingredients.  
Fill loaf pan.

Bake 35-40 minutes (check often, and it will be ready when knife placed in center comes out clean)

This one is not overly sweet, but with some earth balance, or tofutti cream cheese w/ some "honey" agave would be delish.
Sweet P Cranberry Spice Bread 
Ingredients:
1 cup spelt flour
1 cup kamut flour
2 tsp. baking powder
1 tsp. baking soda
pinch of salt
2 tsp. cinnamon
1 1/2 tsp. orange peel
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 cup unsweetened apple sauce
1 TBS. apple cider vinegar
1 tsp. vanilla extract
1 cup pureed sweet potato
1 cup unsweetened vanilla almond milk
1 1/2 cup chopped cranberries
1 cup chopped pecans

Directions:
Preheat oven to 350, and lightly grease loaf pan with coconut oil.
In mixing bowl, stir together dry ingredients.
In a separate bowl mix together wet ingredients.
Add the wet ingredients, to the dry and mix until all of the dry stuff is absorbed.
Fold in cranberries and pecans.
Put in loaf pan.
Bake 40-50 minutes.

























I guess I've got some breakfast goodies to add to the shop when Wess (my brother) and I open OMV! (Oh My Vegan)  Or maybe we should do a cooking show...
