Luck of the New Year

Alright everybody...it's Friday, January 7th, which means we're wrapping up our first week of the new year.  So how are you doing in your commitments to better yourself this year?  Have you found it hard to get a jump start?  Have you already messed up?  Don't give up hope!  It takes time my dear friends to create and break habits.  Lets keep pressing on and moving forward.  How bout a recipe to pick you up and bring in a bit o' luck...
Recipe adapted from The Pioneer Woman
Ingredients:
1 cup black-eyed peas (drained)
1/4 cup finely chopped purple onion
1 heaping TBS. sour supreme
1/2 jalapeno finely chopped
5 large pitted black olives finely chopped
1/2 cup daiya cheddar cheese
3 TBS. chunky salsa
5-10 dashes of hot sauce
salt and pepper to taste
Dash of cumin, paprika, and chili powder

Directions:
Preheat oven to 350.
Mix and bake everything in a 1.5 quart baking dish.  First add the beans, partially mash,  leaving some whole.
Then add all of the other ingredients and mix together.
Spread evenly in dish and bake for about 20 minutes, till heated and cheese is melted.
It's so easy and takes no time at all!  Serve with Food Should Taste Good Sweet Potato Tortilla Chips!  Or your favorite chip.
