Remember when I told you about the Holiday cookies I made and I promised you the recipes...I guess it's better late than never right.
The minute I saw these on the blog of Emily from Daily Garnish I knew they were a must have this Christmas. I love and enjoy Baklava so much, but I think there's a skill to making it...one I will leave to the professionals, but these are so easy and full proof really. You must, must, make them...even if the Holidays are over. You can find the recipe here.
They would be the perfect ending to a Mediterranean style meal...or any other meal! I'm telling you...they're good!
I got the recipe for these Soft Whole-Wheat Ginger Spice Cookies two years ago from a co-worker of mine, and this year I veganized and healthified them!
Ingredients:
1 1/4 cup spelt flour
1 cup whole-wheat flour
2 tsp. ground ginger
1 tsp. baking soda
3/4 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. freshly ground black pepper
1/4 tsp. sea salt
3/4 cup earth balance
1 cup sucanat
1 egg replacer egg
1 TBS. water
1/4 cup molasses
Raw sugar for sprinkling on top
Directions:
Preheat oven to 350
Stir together flours, ginger, baking soda, cinnamon, cloves, pepper and salt.
Set aside.
In a large bowl, cream together earth balance and sugar until light and fluffy.
Beat in egg replacer and stir in water and molasses, then add in flour mixture a little at a time.
Refrigerate dough for at least 1 hour.
Shape dough into walnut-sized balls (mine are always bigger than called for) and lightly flatten with fork in criss-cross shape, then sprinkle with sugar.
Place the cookies two inches apart onto an ungreased cookie sheet.
Bake for 8-10 minutes.
Allow cookies to cool on baking sheet for five minutes before removing to a wire rack to cool completely.
(I skipped the part of taking the time to cream it together because I was short on time, so my cookies came out a little flat, but still good)

Everyone loved them, vegan or not.

A lot of people have been asking me if I'm starting a diet in the new year, and my answer is HECK NO! I've found a lovely way of eating where I can enjoy sweets year round, and you can too.
