We just got back from our annual camping/biking trip in Iowa. Another fun filled weekend with family and friends. But first lets talk food!
I love coming up with recipes that just seem to work and go together. Last week I decided I was in the mood for some grilled veggies. It's the perfect time of year for that sort of thing, but really...I could eat grilled vegetables everyday all year long! But more than that, I wanted them fajita style. So mexican night it was!
Started with some salsa:
That was seriously some of the best salsa I have ever made! Jordan wanted something that resembled more of a restaurant style salsa, so I opted to blend everything together and what came out was pure perfection!
Ingredients:
1 can Fire Roasted Tomatoes (it's the way to go! Trust me.)
1/4 purple onion coarsely chopped
3/4 of a jalapeno (or more depending on how spicy you want it)
A handful of cilantro
1 TBS. minced garlic
a pinch of sea salt
juice of 1/2 to a whole lime
All you have to do is throw all of these things in a blender, pulse it a few time and there you have it!
But we needed more than just salsa.
Introducing Kick o' Chipotle Beans.
Ingredients:
2 cans black beans
1/2 green bell pepper finely chopped
1/4 large purple onion finely chopped
about 1 cup frozen corn
2 TBS. chipotle juice
2-3 chipotles finely chopped (depending on how hot you want your beans)
a handful of cilantro coarsely chopped
1 TBS. minced garlic
1 tsp. of cumin
salt to taste
All along with the grilled veggies, this was a perfect light summer meal. Oh yeah...how could I forget? There was also guacamole! Here's my fave recipe.
And one happy husband.
Which is worth it all! (He opted for a burrito and smothered it in salsa.)
This meal will find it's way to our table again soon I can guarantee you that!
