Almond Butter Chocolate Chip Cookies


One word describes these cookies...YUM!  I would venture to say that I think they're better than regular chocolate chip cookies...seriously? SERIOUSLY!  I got the recipe out of the magazine Clean EatingAnd they were way worth trying out.  I recommend it! Here's the recipe:

Ingredients:
1 cup unsalted almond butter (I used a 12oz. jar and it took the whole thing)
3/4 cup Sucanat (We live in a small town and some stuff is hard to find, this was one of them, so I used brown sugar)
1 large egg
1/2 tsp baking soda
1/4 tsp sea salt
3oz. dark chocolate (70% cocoa or greater), broken into small pieces.

Instructions:
One: Preheat oven to 350.  In a medium bowl, stir together first 5 ingredients until blended.  Stir in chocolate.
Two: Drop dough by rounded tablespoons onto parchment-lined baking sheets.  Bake for 10-12 minutes or until lightly browned.  Let cool on baking sheet 5 minutes, then transfer to wire rack and let cool for additional 15 more minutes.

Makes 24 cookies (though I did not get that many...I don't ever think there's enough dough for what the recipe says, or maybe I just like big cookies.)
