I feel like Tofu tonight?

About a week ago I was with my brother and his wife in Springfield.  And I had lunch with them.  Did I mention they are 100% vegan.  Now I'm not scared of vegan food at all.  I find that most of it is quite good actually.  I just haven't taken the plunge myself.  But I did fall in love with the lunch my brother cooked up for me and I couldn't wait to put my spin on it once I got home.

It starts with this sauce:
When my brother made it for me, he used a hotter sauce, but I wanted to try a different one.  They actually have 4 different ones to choose from.

I cooked up some tofu, added the sauce and then threw in whatever vegetables I thought sounded good.  I went with Celery, Carrots, Sweet Baby Bell Peppers, Mushrooms, a Jalapeno, and a few slices of a Potato.

Along with that I made some of this:

I'm anxious to try out all of the flavors and mix and match different vegetables.  That's the beauty of it, you can do whatever you want.  And if I get really daring...maybe I'll see if I can make my own sauce.

  1. I forgot to tell you that I had this amazing vegan cooking from the MudHouse in Springfield. I was semi-nervous that it would be gross but it was totally delicious and humongous that it took me three tries to finish it. Meaning I took it out of my purse three different days to finish it and it was still moist after three days. yum.
