New Ways to Celebrate

In our family, Birtdhays are a time to indulge.  But recently I've been trying I've learned a new way of enjoying food.  Food more healthy and natural.  I came across this recipe for carrot cake about a month ago and new it would be the perfect thing to make for my Dad for his 50th Birthday.  Here's how mine turned out:



I made some changes.  I used 1 cup whole wheat flour, with 1/4 almond meal, 3/4 cup oat flour.  I also added cloves and nutmeg.  Everyone loved it, and I think it's definitely a recipe to add to the files.  It wasn't very sweet, but I liked that about it.  It's a pretty solid cake so you don't need very much.
