I love cooking and one of the things I hate about being on the road is not having or getting the chance to make home cooked meals. I really grow tired of eating out all of the time, and find that most restaurants don't come close to the taste of good ole home cookin. So here's what was on the menu for dinner tonight.
Bruschetta n' Cheese-Stuffed Chicken
Quinoa with Sun-Dried Tomatoes
Zucchini and Squash
With a Whole Grain Baguette
Recipes are as follows:
Bruschetta 'n Cheese-Stuffed Chicken (Just as a note: I substituted the fresh basil for spinach, and instead of the stove-top I used my own bread crumbs.)
Quinoa with Sun-Dried Tomatoes (From the Eat Clean Diet Cookbook)
ingredients:
1 tsp. olive oil
8 sun-dried tomatoes
2 minced shallots
1 clove garlic
2 cups chicken or vegetable stock
1 cup dry quinoa
Pinch cayenne
2 TBS. cilantro
1 tsp. sea salt
and pepper to taste
instructions:
Heat oil in skillet and add tomatoes, shallots, and garlic. Saute 3-5 minutes. Add stock and bring to a boil. Stir in quinoa and cayenne, and cook according to quinoa instructions. Once thoroughly cooked, let stand 5 minutes. Then fluff with a fork and stir in remaining seasoning.
*I didn't get a picture cause we had company, and I didn't want them to think I was crazy taking a picture of my dinner. But I will tell you this. It was awesome! Loved the quinoa recipe!
