Weekend Fun

We've had a great weekend so far.  Saturdays are my favorite days of the week.  I try to make them extra special days and have a break from the rest of the stress that goes on during a work week.  And since we've been on the road a lot, we haven't gotten to really have a planned day.  This morning we got up, had our daily cup o' joe and headed out the door.  We had a date with a trail.
To our dismay though, some of it had flooded due to the continuous rain the midwest has had, but we at least got in 6 miles.  I hope to do more of this, this summer.  We'll have to see how it goes, because tomorrow starts a regiment of training for me.  More of that to come later.  After our bike ride we came home and I made some 3 grain pancakes.  They were so good, and really hit the spot.
Here I am stirring up a frenzy in my newly acquired pyrex bowl that I picked up at a garage sale for $.75. Yes that 75 cents. I picked up a total of three different ones for $3! AMAZING!  I've been looking for some for quite some time, but they were always so expensive.  Jordan kept telling me to be patient, which is hard for me to do. Even the very day I found these he had told me that just a few hours before!  The coolest part is, my mom has variations of this set.  She's already given me one...but I have to wait on the others.  I just love them.
In good company.  Poor Jordan just wants to eat his pancake.  This is my favorite part of Saturday morning breakfasts--HIM!
Notice I'm still taking pictures as Jordan has almost eaten his entire pancake...hahaha.  And I also love how loaded mine is while his is so plain.  A complete picture of our personalities.  After we ate I cleaned up the kitchen and started cooking again.  This evening we headed over to his Grandpa's to celebrate Jordan's Dad's Birthday.  Boy does that sounds confusing.  I had a lot of stuff to make so I got busy.  Once we got there, Jordan grilled all of the meat, and my portabella mushroom, and then we chowed down.  I took over my leftover mexi-millet and topped my mushroom with it and some spinach!  Perfection!
And then it was time for dessert.  I didn't get a picture of the sinfully sweet cake I made for everyone else, but I did get Jordan to snap a pic of me and my vegan chocolate cake.  Who says you can't have your cake and eat it too?
WAIT!!!  I wasn't ready!!
That's more like it.  Hope you have had a fun weekend!  Anyone do anything special?  P.S.  I think I need to start a recipe page, so I can add all of these goodies to it.  I'll get right on that...later. =)

  1. Yes recipe page please!

I still need to make those awesome granola bars, but as of late I've been in a very "not cooking" mood.

Grilled portabellas are like on of my new loves now Erin. So yummy! Don't give up on working out. Evaluate your time and find a place it has to fit in. It's just a must!
