The American Vegan Gyro

In my search for recipes, I came across one on vegweb that I knew I had to try.  She called it The Lazy College Kid's Easy Falafel.  I am a huge fan of Greek food, and while this stated it wasn't quite like falafel, they said it was still really good. Time to try it for myself.  I tweaked it a bit to make it my own, so here's what I did.

The American Vegan Gyro
1 can chickpeas, mashed
1/4 onion
2-3 cloves garlic
2 TBS. barley flour
Dash of Almond Milk
1 Egg Substitute (I used 1 TBS. Milled Flax Seeds : 3 TBS. Water)
1/2 lemon, squeezed for the juice
1 TBS. olive oil
1 tsp. Oregano
Dash of Cayenne
1 TBS. curry powder
Salt and Pepper to taste

Sprinkle with sesame seeds

Mix all together and form into ping pong size balls, and smash down a little into mini hockey pucks.  Bake at 375 until golden, flipping half way through.  (There was no time suggested and I forgot to time mine, but because they were pretty moist, I would say 5-10 min. on each side)

I thought they turned out so cute.  And into a sandwich they would go!  I also made some tzatziki while I was waiting for them to come out of the oven.  It's really easy.  I just threw everything into my magic bullet, and voila.  It was Greek yogurt, cucumber, purple onion, lemon juice, fresh mint, salt, and garlic.  I didn't have any dill, but that's in most recipes as well.
It was so good, and I'm definitely having this again for lunch today.  I added spinach, cucumber, tomatoes, and purple onions along with the "falafel" and tzatziki.  Served up with some ice cold water, that I added cucumbers, lemons, and mint to.  It tasted so crisp!
