Better Than Carrot Cake...It's Scuffins

Angela from Oh She Glows is always coming up with the best recipes.  After I saw this one, I went straight to the kitchen and proceeded to whip up a batch of my own.  The almighty Healthy Carrot Cake Power Scuffins.  (A hybrid of a scone, cookie, and muffin)
I love how she is always experimenting in the kitchen, and lately I've been getting into the spirit as well.  It's fun to take inspiration from a recipe and put your own spin on it.
Here's what I did:
Ingredients:
  • 3/4 cup whole grain spelt flour and 1/4 cup of kamut flour
  • 1/2 tsp baking power
  • 1/4 tsp fine grain sea salt
  • 1.5 tsp pumpkin pie spice (OR: 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger)
  • 2 tbsp coconut oil
  • 1/2 cup pure maple syrup + a drizzle of molasses
  • 1 tsp pure vanilla extract
  • Chia/flax egg: 1 tbsp ground chia seeds + 3 tbsp water OR 1 tbsp ground flax + 3 tbsp water, mixed and set aside for 5 mins
  • 1/4 cup homemade applesauce
  • 1/2 cup regular oats
  • 1 cup shredded or grated carrots (approx 2 medium)
  • 1/4 cup raisins
  • 1/4 cup toasted, chopped walnuts + a handful of pepita seeds + a handful of sunflower seeds
  • Coconut, for garnish (I was excited to use my new coconut)
These turned out sooooo good!  As soon as I took them out of the oven, I thought I'd try half of one for a snack, but that didn't work at all.  I gobbled up the whole thing.  It was so yummy!  I will be making these again and again.  Thanks for the great recipe!
