I love how she is always experimenting in the kitchen, and lately I've been getting into the spirit as well. It's fun to take inspiration from a recipe and put your own spin on it.
Here's what I did:
Ingredients:
- 3/4 cup whole grain spelt flour and 1/4 cup of kamut flour
- 1/2 tsp baking power
- 1/4 tsp fine grain sea salt
- 1.5 tsp pumpkin pie spice (OR: 1 tsp cinnamon, 1/4 tsp nutmeg, 1/4 tsp ginger)
- 2 tbsp coconut oil
- 1/2 cup pure maple syrup + a drizzle of molasses
- 1 tsp pure vanilla extract
- Chia/flax egg: 1 tbsp ground chia seeds + 3 tbsp water OR 1 tbsp ground flax + 3 tbsp water, mixed and set aside for 5 mins
- 1/4 cup homemade applesauce
- 1/2 cup regular oats
- 1 cup shredded or grated carrots (approx 2 medium)
- 1/4 cup raisins
- 1/4 cup toasted, chopped walnuts + a handful of pepita seeds + a handful of sunflower seeds
- Coconut, for garnish (I was excited to use my new coconut)
